A buffalo wing, in American cuisine, is an unbreaded chicken-wing section (flats or drumettes) that is generally deep-fried then coated or dipped in a sauce consisting of a vinegar-based cayenne pepper, hot sauce, and melted butter prior to serving. They are traditionally served hot, along with celery & carrot sticks. Also, they traditionally come with a dip option of blue cheese or ranch dressing. Buffalo wings are named after Buffalo, New York, where they were invented; they have no relation to the animal.
As the market expanded, restaurants began to create a variety of sauces in addition to buffalo sauce. Some of these new sauces were influenced by Chinese, Japanese, Thai, Carribean, and Indian cuisines. Other flavors created by restaurants include but aren't limited to unique combinations such as Blueberry BBQ Wing Sauce, Maple/Bacon Glaze, and the popular Lemon Pepper from Miami.
